There is nothing bad about steak. I love the way it tastes, smells, looks - the whole package.
When it comes to cooking steak, I keep it pretty simple. A bit of Lowry's, a dash of pepper and grill it to about medium. It has to have just a hint of pink inside, but no blood. A bloody steak is a bad steak in my book.
My favorite cuts are New York and Rib-eye. Rib-eyes can get a bit expensive though, so I don't always go with the best cut. If it is cooked correctly, nearly any cut will be fine.
I also like mine smothered in garlic mushrooms that I cook in butter. Besides that, I don't put anything on my steak. I recoil at the mere sight of steak sauce. Who would kill a steak with steak sauce?
So, how do you guys like your steak? (Not carne asada ... that's different and I love it too!). Well done, rare? Steak sauce? If you use steak sauce or your own concoction, please post why it adds to the flavor. Also share any special recipes. The only way I cook it besides straight up is with teriyaki. When I make it that way I soak the meat for a few hours to make sure it is saturated. My wife actually makes an incredible broiled steak with her own butter and garlic sauce. No kidding ... it's great. She injects the meat with the mixture and it is juicy and tender. Add a twice-baked potato and you are in culinary heaven.

i love my steak bloody red. Sol Market in calexico usually has Tbone steaks that are less expensive than carne asada. those are good, i've had the cabreria steak at Rosa's and that's real good alos.
i love the mushrooms, but i don't add garlic. just butter.

The blood just kills it for me. My brother, on the other hand, loves a red plate.

Isn't Lowry's steak sauce?

I do have a special recipe, but it was given to me by my friend chino. If he found out I had posted it on the internet...you might find me floating in the american canal.

I got a nice recipe online for a spice rub that consisted of ancho chiles, ground espresso, ground coriander, and a few other things. You rub that on a double cut rib eye steak, sear it on both sides in a pan with a little oil and then stick that bad boy in the oven to finish roasting. Loved this thing.
Here is the recipe. One note: I found that buying the ingredients whole whenever possible (ancho chiles and chile de arbol, coriander, etc) and grinding them myself at home gave the steak a bolder flavor. http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_32295,00.html

Thanks ... that sounds fantastic. And Lowry's is a seasoned salt, not a sauce.
Posted by: JBrad | February 27, 2008 at 02:14 PM
But there is a lowry's steak sauce though right?
Posted by: ME | February 27, 2008 at 03:14 PM
I don't know. But I put the seasoned salt on nearly everything: steak, chicken, popcorn, cereal...

Rigo, I think you just posted Chino's recipe. See ya!!!
Posted by: soulman | February 27, 2008 at 04:03 PM
No no no, Chino's recipe is totally different and involves an alcoholic marinade. Don't even play that way, he'll know.

Rigos either going to
a) wake up with a horses head on his bed or
b) be sleeping with the fishes tonight.

I have a friend, Martin, that used to work at Sprint in Calexico, Chino called me up and asked if Martin could pull some strings and get him a new phone. So I call up Martin and tell him that if he doesn't get Chino a new phone that his computers at the Sprint Store would crash. So he hooks Chino up with a phone and a few days later his computers crash and he calls me up all pissed off saying that he helped Chino so why is Chino messing with his computers.
Be afraid of Chino, be very afraid...

I like my steak to be medium well, I used to do it or order it medium rare but I kept on getting more rare than medium and I can't stand to eat red. To me that just nasty. As far as the steak sauce, when I make it I don't put any when I'm eating it. On the rare occasion that I order steak at a restaurant I drown it in that stuff.
Posted by: me | February 27, 2008 at 11:02 PM
That's a good point. When I eat out, I rarely (steak pun!) order steak because I think to myself, "There is no way in hell they are going to serve me a steak that's better than what I make myself at home".
Posted by: Rodrigo | February 28, 2008 at 10:32 AM
The only time to order a steak when you go out is if you go to a high-end restaurant. I have had plenty of good steaks when eating out, but never at a low-end place.
Posted by: JBrad | February 28, 2008 at 11:30 AM
Right. High end steak houses are a different story. That's not really my thing, but my brother's in law love those places, and tell me they are worth every penny.
Posted by: Rodrigo | February 29, 2008 at 02:36 PM
Let's get a few things straight: it's spelled LAWRY'S, not Lowry's. And the prime rib served in their venerable Los Angeles restaurant is as good as sex. Just as tender, too.

If your compairing food to sex you need to have a serious talk with your mate. In my book there is no comparison

a little bit of seasoning and 8 minutes each side of a nice porter house steak on a nice hot grill is my choice. Rameys has the best steaks around. they will cut your steak as thick as you want it.
Posted by: pinomatus | March 02, 2008 at 08:32 PM
Where is this Rameys place you speak of?
Posted by: ME | March 03, 2008 at 02:21 PM
rameys is in brawley. i make my way from heber when ever i get the urge to make steaks.

I like my steaks marinated in Teriyaki sauce and I like it medium no blood. I don't like to put any steak sauce or anything else on my steak. I went to lunch one time with my friend Esther and I just about died when she put catsup on her New York Steak.
